Beef chow fen noodles have roots in Chinese cuisine, particularly in the southern region of Guangzhou. These noodles gained popularity for their rich flavors and hearty ingredients. Traditionally, they are stir-fried with slices of beef, vegetables, and often seasoned with a spicy sauce, embodying the diverse culinary heritage of China.
INGREDIENTS:1
10 oz steak
1/2 onion
3 stems of scallions
1 lbs flat rice noodles
Marinade:
1 tsp baking soda
1 tbsp cornstarch
1 tbsp oyster sauce
1 tbsp soy sauce
1 tsp dark soy sauce
1/4 tsp white pepper
2 tbsp water
1 tsp cooking wine
1 tsp sugar
Chow fen sauce
1 tsp dark soy sauce
1 tbsp soy sauce
1 tbsp oyster sauce
cooking oil
sesame sauce
STEPS:
Cut your beef into thin slices, and then let it rinse in a bowl of water
Peel and cut your onion into thin slices, as well as your scallions
To make the beef marinade: in a bowl, mix together the baking soda, cornstarch, oyster sauce, soy sauce, dark soy sauce, white pepper, water, cooking wine, and sugar.
Drain the meat, squeezing out the excess water. Then add the meat to the marinade, fully coating the meat.
Separate and cut the noodles
To make the chow fen sauce, mix the dark soy sauce, soy sauce, and oyster sauce in a small bowl
Add 1 tbsp cooking oil to the marinated beef
Heat the wok on high heat for about a minute and add around 3 tbsp of cooking oil. Once the oil starts to ripple (30 sec), add in the marinated beef and cook for around a minute. The meat should still be a little red. Remove the meat from the wok and set it aside.
In the remaining oil, fry the onion and scallions until fragrant (30 sec), and then add in the rice noodles. cook on high heat for around 2 minutes or until golden brown. Add the chow fen sauce and cook for another minute.
Add the beef and mix. Let it cook for another minute, before turning off the heat and adding another tsp of sesame oil.
