Gnocchi, a type of pasta made from potatoes, flour, or semolina, has a rich history dating back to ancient times. Originating in Italy, gnocchi was initially made with ingredients like wheat flour, but the introduction of potatoes to Europe in the 16th century led to the creation of the potato-based version we know today. Over the centuries, gnocchi has evolved into a beloved comfort food enjoyed worldwide, with regional variations and unique recipes reflecting the diverse culinary traditions of different cultures.
INGREDIENTS FOR GNOCCHI (serves 8)1:
900 g (2 lb) Yukon gold (or regular gold) potatoes.
2 egg yolks
1/2 tsp. fine sea salt
170 g all purpose flour, plus more as needed
Semolina or rice flour, for dusting
STEPS:
Place potatoes into boiling water for 25 minutes, keep the skin on. Dry the potatoes well.


While potatoes are warm and cool enough to handle, peel off the skin and allow steam to evaporate. Mash the potatoes and form a well in the center.


Add egg yolk, salt, and some flour in the well and gently mix with fork to combine, then continue adding the remaining flour.
As the dough begins to stick together, remove the fork and start bringing the dough together with your hands. Smush the dough together to form a cohesive ball.
Cover with an upturned bowl and let rest for 10 minutes. Now cut the dough ball in 8 equal pieces and roll each piece out to about 10-12 inches long. Now cut across making about 20-22 gnocchi. Transfer the gnocchi to a sheet pan dusted in semolina flour.
To cook the gnocchi, salt the water, then place them in boiling water in small batches for 30 seconds to 1 minute until they float. Then transfer the gnocchi directly into the sauce.


INGREDIENTS FOR PESTO SAUCE:2
2 tablespoons of butter
2 cloves of garlic
1/2 pesto
1 cup heavy cream
1/2 cup parmesan
salt & pepper to taste
STEPS FOR PESTO SAUCE:
Melt the butter on a saucepan on medium heat. Then add the garlic and cook until fragrant


Add in the heavy cream, pesto, and parmesan, mixing until the sauce has thickened. Then, season with salt and pepper to taste.
Mix in the gnocchi and enjoy!
INGREDIENTS FOR THE TOMATO SAUCE:3
1/2 cup olive oil
1 tablespoon garlic
2/3 cup tomato paste
1 & 1/3 cup heavy cream
red pepper flakes to taste
salt & pepper to taste
1/2 cup parmesan
2 tablespoons butter
water
STEPS FOR TOMATO SAUCE:
Add the olive oil to a saucepan on medium heat. Then add the garlic and the tomato paste and cook for 4-5 minutes.
Add in the heavy cream and let the mixture simmer for about 3 minutes. Mix in the remaining ingredients and stir well, making sure everything is incorporated.
Mix the sauce with the gnocchi and enjoy!
We chose to make gnocchi as it is a household favorite and we wanted to share this dish with our families.
